Lunch Today! It was seriously and truly delicious. and *basically* clean…I did add green tobasco lol
Steamed carrots and two turkey patties that I made myself.
Turkey Patties:
Ground Turkey
shredded zucchini
chopped mushrooms
chopped onions
minced garlic
Ms. Dash garlic & herbs seasoning
a pinch of sea salt
1 egg, beaten
-topped with avocado & a little sharp cheddar-

Dinner last night:
Jamie Eason’s turkey muffins & some zucchini/carrot “pasta” with spaghetti sauce and a little bit of sharp cheddar -nom nom nom :)
to make the veggie “pasta”, just slice the zucchini and carrots with a julienne peeler, toss the “noodles” in a steamer, and cook until tender! Super easy!

Crock-Pot Dinner! “East-West Barbequed Chicken”
This chicken was cooked on low for 8 hours with the following sauce (from the Crock-Pot website):
1/3 cup ketchup
1/3 cup orange marmalade
2 tablespoons brown sugar
3 tablespoons soy sauce
1 tablespoon white wine vinegar
1 teaspoon fresh minced ginger
1 clove garlic, minced
Underneath the chicken is some rice and stir-fry vegetables, which included:
Yams
Carrots
Broccoli
Squash
Onions
Mushrooms

my delicious dinner tonight!
BLACK BEAN BURGER WITH OVEN-ROASTED CARROTS - APPROX. 375 CAL FOR WHOLE MEAL!
Black Bean Burgers : Ingredients : makes about 4-5 medium sized patties
1/2 can black beans
1 egg
1/4 cup shredded cheese
1/4 cup fire roasted tomatoes w/garlic (canned)
chili powder, garlic salt, pepper, lime juice
Directions
1. *make sure beans are strained!* mash beans until mush, then mix in all ingredients.
2. form into patty, place in pan, cook like you would a normal burger. *note* - if your mixture was a little more liquidy like mine, that’s ok - sautee it up, then form the patty when it’s more cooked. Turned out well for me!
3. Top with your favorite salsa and some avocado!
Roasted Carrots : Ingredients
3 large carrots (not baby carrots!)
ground ginger, garlic salt, chili powder
Directions:
1. Chop carrots into bite sized pieces
2. Sprinkle seasonings over carrots (go easy on the chili powder - it doesn’t take much).
3. bake at 400 until soft (20 min?)
The dip pictured for my carrots is 2 tbsp sour cream mixed with ranch powder. YUM! Add 35 cal for the dip

First edible and healthy meal in the caf since I’ve gotten back to school. Roast beef with a sweet potato and carrots.
