Buckwheat Mango-Lemon Pancakes! GLUTEN FREE :)
APPROX. 250 cal/TWO pancakes (1/4 cup batter serving each)
My mom is trying to go gluten-free, so I thought I would come up with a yummy gluten-free pancake recipe :) I really just followed a basic pancake recipe but then made some alterations, as you will see below. They turned out great! I didn’t even need syrup for them because they had so much flavor.
Ingredients:
1 cup buckwheat flour
1 tsp baking powder
2 Tbsp Truvia stevia (6 packets)
1/2 tsp salt
1 egg, beaten
1 cup milk
2 Tbsp melted butter or margarine
1 tsp vanilla
cubed mango
lemon zest (maybe 1.5 tbsp?)
Directions:
1. Mix all dry ingredients (flour through salt).
2. Add in, one at a time, the wet ingredients (egg through vanilla)
3. cube the mango and mix in to batter (about 1/4 cup)
4. Zest the whole lemon (if it is a large one, stick around 1-2 tbsp zest)
5. Use 1/4 cup to measure out batter, and cook until brown on both sides.

Crock-Pot Dinner! “East-West Barbequed Chicken”
This chicken was cooked on low for 8 hours with the following sauce (from the Crock-Pot website):
1/3 cup ketchup
1/3 cup orange marmalade
2 tablespoons brown sugar
3 tablespoons soy sauce
1 tablespoon white wine vinegar
1 teaspoon fresh minced ginger
1 clove garlic, minced
Underneath the chicken is some rice and stir-fry vegetables, which included:
Yams
Carrots
Broccoli
Squash
Onions
Mushrooms
Zucchini ‘pasta’ and Avocado sauce
Ingredients:
2 zucchini, peeled with a julienne slicer
Sauce:
1 avocado
1 tbsp cilantro
1/2 lime
salt & pepper
1 clove garlic
1/2 cup spinach (OPTIONAL - I didn’t really like it)
2 tbsp sour cream (OPTIONAL - this wasn’t in the original recipe but I liked it)
1-2 tbsp olive oil
Directions:
1. In a blender, combine all sauce ingredients and blend until smooth.
2. In a pot, boil water. place julienned zucchini in pot.
3. Cook until *JUST* tender - only a couple minutes! if you cook for too long, the ‘noodles’ will fall apart.
4. mix together, slice grape tomatoes and add to pasta.
5. microwave for 30-40 seconds. add more salt & pepper as necessary.

I seasoned it with: Garlic salt, nutritional yeast, pepper, chili powder, and italian seasoning
