If you’ve never had zucchini in a grilled cheese sandwich…you haven’t lived. shred like a 1/2 cup to 3/4 of a cup, and then combine it with some cheese between bread….heaven.

not usually a fan of frozen meals. but this….this was amazing. black bean & cheese enchilada, 240 calories with 4g fiber YES please! wasn’t too much, wasn’t too little. excellent quick lunch for work! also I just love all of Amy’s products.
