one pan pasta.

12 oz whole wheat noodles
2 roma tomatoes, chopped
2 sprigs basil
1/2 onion, chopped
2 tbsp garlic, minced
.5 to 1 tsp chili pepper flakes
2 tsp salt
pepper to taste
2 tbsp olive oil
4.5 cups water

cook until noodles are finished. top with basil.
THAT EASY.

Pictured above is my dinner! I made Paleo Sweet Potato Ground Beef Hash (via PrimalPal.Net)
I was looking for a tasty ground beef recipe today, since ground beef isn’t really something I eat that often; I typically stick to turkey when going the ground meat route. Husband loves ground beef though, and he just bought a ton of it for himself, but then went out of town for work. So…I was really just left with ground beef to cook! I usually go to the gym after work (off at 4 PM), so I was looking for something that would be excellent as a post-workout. TA DA THIS IS IT! It was amazing and although I didn’t make the whole recipe (I cut it down quite a bit so it would be one serving), I certainly ate every bit of it that I cooked. YUM. Give it a try! 

Magical Hour Paleo Post Workout Sweet Potato and Ground Beef Hash
Prep Time: Approx 10 MinuteCook Time: Approx 20 Minutes Serves: 2-3
Ingredients for Magical Hour Paleo Sweet Potato and Ground Beef Hash
2 large sweet potatoes, peeled and chopped1 lb ground beef (grass fed)1 tbsp bacon fat 3 tbsp butter or FOC (Fat Of Choice) 1 medium onion, chopped 1 tbsp dried thyme 1/2 tsp of red pepper flakes 4 eggs 2 cups fresh spinach, chopped salt and pepper to taste
Instructions for Magical Hour Paleo Sweet Potato and Ground Beef Hash
1. In a large skillet over medium-high heat, melt two tbsp of butter with the one tbsp of bacon fat.
2. Add the sweet potatoes to the skillet and then season with the thyme, red pepper flakes, salt and pepper. Cook the potatoes until they are tender and have a golden brown color.
3. In another skillet, cook your ground beef over medium heat for approximately five minutes or until it’s browned.
4. Once the potatoes are golden brown add the onions and the browned beef into the skillet. Cook for an additional 4 to 5 minutes.
5. In the skillet you cooked your ground beef with melt another tbsp of butter. Fry your eggs to your liking. I do mine over medium. Yum!
6. Add the chopped spinach into the sweet potatoes and cook until the spinach begins to wilt and then remove from heat. This will only take a minute or two.
7. Dish up the hash and place two fried eggs on top. Enjoy some excellent post workout nutrition.

Cauliflower pizza for dinner! om nom nom.
Cauliflower pizza dough topped with sauce, sharp cheddar, spinach, onions, tomatoes, and italian seasoned ground turkey.
recipe here. best one i’ve come across so far.

Cauliflower Pizza Dough 1 head of raw cauliflower (you won’t use it all but you can freeze it for the next time a pizza craving strikes) 1 cup shredded parmesan 1 egg 1/2 tsp garlic 1 tsp mrs. dash garlic and herb  pizza sauce, cheese, and your favorite toppings remove stem from head of cauliflower and cut off florets. place in food processor and pulse until it looks like rice or grain. (do not puree!) place 1 cup of riced cauliflower in a microwave safe bowl and cook on high 2-3 minutes. remove and let cool. (you can cook all the cauliflower and freeze it in 1 cup portions for the next time you make pizza.) preheat oven to 450 degrees F. line a cookie sheet with foil and spray well with cooking spray. in a medium bowl combine 1 cup cooked cauliflower with parmesan cheese, egg, garlic, and mrs. dash. transfer mixture to cookie sheet and pat into a large, thin, round. make sure it is pressed together well. it should be about 1/4” thick. bake for about 15 minutes but keep an eye on it. you want it to be browned all over and the edges to be really brown. let it cool for at least 15 minutes (this helps it become more solid). peel back foil from crust and then place the crust on a parchment paper lined cookie sheet. top with sauce, cheese, and your favorite toppings and bake just until cheese is bubbly (4-5 minutes).

Crock-Pot Dinner! “East-West Barbequed Chicken”
This chicken was cooked on low for 8 hours with the following sauce (from the Crock-Pot website):1/3 cup ketchup1/3 cup orange marmalade2 tablespoons brown sugar3 tablespoons soy sauce1 tablespoon white wine vinegar1 teaspoon fresh minced ginger1 clove garlic, minced




Underneath the chicken is some rice and stir-fry vegetables, which included:YamsCarrotsBroccoliSquashOnionsMushrooms

DONE! yum!
