Dinner!
Homemade & clean “rice-a-roni” with an egg over easy on topĀ
SOOOO good, and much better for you than regular rice-a-roni!
Ingredients:
brown rice
whole wheat pasta, broken up into pieces
vegetable broth & water
basil, sage, oregano, garlic powder, sea salt, black pepper
minced garlic
minced onions
Directions:
1. Sautee rice/pasta in a little bit of butter until pasta turns brown.
2. pour in vegetable broth and seasonings and mix well; bring to a boil and then simmer.
3. continually add water as needed until rice is soft.
ta da! Rice-A-Roni! clean style! Top with an over easy egg or add your favorite meat.

My best shot at Outback Steakhouse “No Rules” Pasta with Chicken
Approx. 400-500 Calories
A couple weeks ago, I went to Redding to visit some of my best friends. We went to Outback Steakhouse and one of my friends got the No Rules Fettuccine Pasta - and it was the most delicious pasta I’ve ever had! It had a delicious garlic flavor, but it was also spicy! I had never had spicy pasta before. The next day, we tried to replicate it and had great success! Tonight I decided to make it for my husband to see how he liked it - and he ate every last bit :)
On a side note, the green beans are left over from Thanksgiving - bacon and onions sauteed together, and then mixed in with the green beans, butter, garlic salt, & pepper.
Ingredients:
1 jar Classico Roasted Garlic Alfredo
Cayenne Pepper (be CAREFUL with how much you use!)
Black Pepper
White Pepper
Garlic Salt
Italian herb mix
Whole wheat spaghetti
Directions:
1. Bring a pot of water to a boil; once boiling, put pasta in the pot and cook until noodles are soft.
2. While you are bringing the water to a boil, pour jar of sauce into a small saucepan. Add all seasonings to sauce IN MODERATION. Cayenne pepper can EASILY ruin your sauce. add a little bit at a time and stir after each time you add it until it’s at the right spiciness.
3. I added chicken to my sauce, but that’s totally optional.
4. Strain water from pasta when it’s done and mix with pasta sauce and enjoy!

Spaghetti!
Whole wheat pasta, Tomaso’s spaghetti sauce, ground turkey, rainbow chard, and squash.
oh, and cheese. plenty of cheese.

Zucchini ‘pasta’ and Avocado sauce
Ingredients:
2 zucchini, peeled with a julienne slicer
Sauce:
1 avocado
1 tbsp cilantro
1/2 lime
salt & pepper
1 clove garlic
1/2 cup spinach (OPTIONAL - I didn’t really like it)
2 tbsp sour cream (OPTIONAL - this wasn’t in the original recipe but I liked it)
1-2 tbsp olive oil
Directions:
1. In a blender, combine all sauce ingredients and blend until smooth.
2. In a pot, boil water. place julienned zucchini in pot.
3. Cook until *JUST* tender - only a couple minutes! if you cook for too long, the ‘noodles’ will fall apart.
4. mix together, slice grape tomatoes and add to pasta.
5. microwave for 30-40 seconds. add more salt & pepper as necessary.

“Cheesy” Pasta Bowl!
use this recipe for the pasta
then mix in cooked peas, raw spinach, and a cooked boca burger (any kind) and you are good to go!
fairly low cal - SUPER TASTY OM NOM NOM :)
