except I used delicata squash instead of pumpkin. and it was amazing. I even used the squash seeds and roasted them for the pepita kale salsa, as you can see in the picture! it’s DELICIOUS!

Dinner last night. Carrot & Zucchini noodles with mushrooms and green onions in a sriracha/peanut sauce :)

one pan pasta.

12 oz whole wheat noodles
2 roma tomatoes, chopped
2 sprigs basil
1/2 onion, chopped
2 tbsp garlic, minced
.5 to 1 tsp chili pepper flakes
2 tsp salt
pepper to taste
2 tbsp olive oil
4.5 cups water

cook until noodles are finished. top with basil.
THAT EASY.
